Lets talk about depth of field and bokeh

Why do so many "photographers" these days insist on the fastest lenses they can find and then shooting them wide open? If you look at many of the great photographers, you will rarely see this. You will see nicely rendered backgrounds that turn into a tasteful and artistically smooth blur. A slight and pleasant look and you can still make out most of whats around the subject although its a bit out of focus. Then you see the bad, amateur look. Those who are obsessed with f/1.2 lenses shot wide open and the background turns into a confusing and mushy fuzziness with weird looking block objects etc...that some drool over as a desired look. Its the difference between a professional look and an amateur look IMO. Reminds me of the phrase "just because you can doesn't mean you should". Discuss.
